Chicken, Honey & Mustard Sausage Roll (Serves 6)

For a quick simple supper try this giant chicken, honey & mustard sausage roll, made with chicken sausages and ready made puff pastry, it's super quick, easy and delicious. Serve with some relish and a salad or for the kids, some baked beans, it's guaranteed to be a hit.


Ingredients:

2 packs of 8 chicken sausages

2 tbsps wholegrain mustard

1 tbsp dijon mustard

3 tbsps honey

3 tbsps finely chopped flat leaf parsley or tarragon leaves

2 sheets ready rolled puff pastry

Sea salt & coarsely ground black pepper

1 egg, lightly beaten

1 tbsp sesame seeds


Method:

1. Preheat oven to 200˚C (Aga roasting oven)


2. Remove skins from sausages and place in large bowl with mustards, honey and herbs, season with salt & pepper, mix well to combine.

2 packs of 8 chicken sausages, 2 tbsps wholegrain mustard, 1 tbsp dijon mustard, 3 tbsps honey, 3 tbsps finely chopped flat leaf parsley or tarragon leaves, salt & coarsely ground pepper


3. Place one sheet of puff pastry on a baking sheet lined with baking paper, place sausage meat on top, spread out to cover but leave a 2 cm border. Place second sheet of puff pastry on top and seal down edges, pinching to form a seal, making one large sausage roll/pie.

With the tip of a sharp knife cut lines across surface of pastry being careful not to cut all the way through. Brush with beaten egg and sprinkle with sesame seeds.

2 sheet ready rolled puff pastry, 1 beaten egg, 1 tbsp sesame seeds

4. Bake for 25 mins or until golden and cooked through. To serve, cut into slices and serve with some relish and a salad or baked beans.

Chicken sausages available from O'Flynn's Gourmet Sausage Co, The English Market, Cork or any good supermarket. Puff pastry available in the chilled section of your supermarket or in the freezer section .
