Greek Salad (serves 4)

A simple greek salad is absolutely delicious, serve with chicken or fish or simply on its own, it is hard to beat. Try with BBQ chicken thighs for an authentic mediterranean style easy supper.



Ingredients:

450g ripe well-flavoured red tomatoes

1/2 cucumber

1 red onion

20 black olives (kalamata if possible)

4 tbsps extra virgin olive oil, plus extra to serve

1 tbsp red wine vinegar

1/2 tsp salt

6 turns of a black peppermill

1 tsp dried oregano

200g feta cheese


Method:

Cut the tomatoes into chunks.

Cut the cucumber in half (or quarters) lengthways and then into thick slices.

Slice red onion, very thinly. Mix and place on a serving platter.

Make dressing by mixing together olive oil, vinegar, salt & pepper, pour over salad.

Slice feta, place on top of salad and sprinkle with dried oregano.

Drizzle with a little more olive oil & serve immediately.
