Grilled Corn in Harissa Mayo (serves 4)

Grilled corn in harissa mayo with feta, mint, coriander & chilli. This is a really tasty way of serving corn on the cob, it makes a very good accompaniment to any barbecue or middle eastern style feast and is a great side for Chicken Shawarmas. Ingredients:

4 corn on the cob

200g feta cheese

1 tsp chilli flakes

a handful of finely chopped coriander

6-8 large mint leaves, roughly chopped

Harissa Mayo

3 tbsps mayo

1 tbsp rose Harissa

finely grated zest of 1 lime

squeeze of lime juice

Maldon sea salt flakes & freshly ground black pepper


Method:

Combine all the ingredients for the harissa mayo in a bowl and stir well, set aside.

Cook the corn on the cob in a pot of boiling water for 10 mins. While cooking heat a griddle pan over a medium-high heat (AGA boiling plate). After 10 mins drain corn and pat dry with kitchen paper.

Place corn on hot griddle pan and turn up to high, cook for 6-8 mins, turning regularly until char marks appear on all sides.

Finely crumble feta cheese over a serving plate, divide mayo into 4 portions and spread a portion over each corn, then roll in the feta cheese, sprinkle over chilli flakes, coriander & mint. Serve immediately.

Note on Rose harissa, I find Beluza rose harissa to be extremely good, it is made from chilli peppers and a mix of over 40 herbs and spices. The addition of rose petals give a special sweetness and softens the chilli kick.
